    The collective kitchen in factories, companies,… is the place that processes, provides daily meals for all staff, so the amount of wastewater from the kitchen is very large and also very complicated to treat.

    Characteristics of wastewater from the collective kitchen

    The kitchen is a place that discharges a lot of wastewater with a complex nature. In particular, the wastewater’s complexity for collective kitchens is increased many times because of the huge amount of food that needs to be processed and the wastewater containing many impurities, chemicals such as nitrogen, phosphorus which are seriously harmful to the environment.

    • Grease: is discharged with wastewater including excess oil during processing, animal fats from meats, and fish during cleaning. Grease has a strong chemical connection that hardens when exposed to cold temperatures. Especially, they coagulate very quickly in winter. When discharged into the sewer line, grease sticks to the pipeline and then causes the pipeline to clog.
    • To clean a large number of dishes, chopsticks, food processing tools that need to use a large amount of detergent. These chemicals have strong cleaning properties, and corrosion of some quickly destroys pipes.
    • Mud, waste from processed foods, and small food scraps and leftovers passing through the sewage barrier, accumulate for a long time. This causes to clog the water pipes and be a nutrient-rich food source of bacteria, potentially pathogenic microorganisms in wastewater.

    The general structure of wastewater treatment equipment

    1. Equipment to separate garbage: This is the first important equipment of the kitchen wastewater treatment system. In the collective kitchen, there is a lot of waste from food. The wastewater is brought down to the water pipe by gravity, and then raw garbage is stopped here to avoid the blockage of the water pipe affecting the pump as well as other equipment of the system.

    2. Grease trap: After waste is separated from the water, the wastewater flows into the grease trap automatically. Greases are kept in this grease trap and are sucked to process periodically. Thanks to the trap, the water pump, and water pipes can operate effectively without being blocked, and avoid affecting the working process of the system.

    3. Air tank: is an indispensable place of the domestic wastewater treatment system. After the grease separation process, according to the sewage pump line, wastewater flows into the air tank. The blower is installed with the task of providing oxygen continuously to avoid the anaerobic phenomenon. Here, sources of wastewater are concentrated into a single source. The air tank functions to regulate the concentration and flow of water for the system to work following the process, and to avoid overloading the system. The wastewater, after being treated in the air tank, continues to be pumped to the aerobic biological tank using adhesives.

    4. Adhesion aerobic biological tank: The technology using activated sludge is advanced and high efficient. The aerobic biological tank is an important device that decides the whole process of treating wastewater from collective kitchens of factories, agencies. 

    Bacteria, pathogenic microorganisms in water being very small in size, exist in suspension or the form of adhesion to the buffer material installed in the aerobic biological tank. The air blowers provide oxygen to the aerobic microorganisms, which gives them enough oxygen to convert organic matter into a nutrient-rich food source to grow and increase biomass and reduces the pollution level of the water source to the lowest one. 

    5. Secondary sedimentation tank: is responsible for receiving treated products in biological tanks, separating microbial sludge from the surface of the wastewater.

    The sedimentation tank is installed with a central pipe where the wastewater treated from the anaerobic biological tank is gathered. When going through the central pipe, all wastewater will be distributed across the horizontal surface at the bottom of the pipe. The wastewater going out of the central pipe goes up in the secondary sedimentation tank in a static state. With a very slow rate of the wastewater, the residues formed with a larger density prevail and settle into the sedimentation tank. After the wastewater comes out of the sedimentation tank, surface water is taken to the disinfection tank, at which COD concentration decreases to 80-85%. Sediment in the tank will be pumped back to the anaerobic biological tank and excess sludge will be pumped to the sludge tank. 

    6. Sludge tank: This is like a large warehouse having responsibility for keeping and storing sludge. Periodically, sludge from these tanks will be sucked up for treatment. Surface water will be pumped back to the air tank to continue the wastewater treatment cycle.

    7. Disinfection tank: Collective kitchen wastewater, after biological treatment, still has many types of microorganisms existing that are potentially pathogenic bacteria.

    At the disinfection tank, Chlorine (Cl), which is a chemical element with extremely strong oxidizing and disinfecting properties, is capable of destroying harmful microorganisms in water and disrupts the metabolic activity of them, makes them unable to find food and die at the same time. Standard wastewater will be discharged into the environment.
